Kashmiri Sun-Dried Bottle Gourd
Traditionally known as Al Hachi / Al Hatche, Kashmiri Sun-Dried Bottle Gourd is part of Kashmir’s traditional practice of preserving seasonal vegetables for the winter months.
Fresh bottle gourd is carefully prepared and naturally dried under the sun, reducing its moisture while developing a distinctive texture and concentrated flavour.
This traditional preservation method forms part of Hokh Syun, Kashmir’s long-standing practice of sun-drying vegetables during summer and autumn so they can be stored and enjoyed when fresh produce becomes limited during winter.
Once soaked, rehydrated and cooked, the dried bottle gourd becomes tender and works well in traditional Kashmiri preparations, curries and vegetable dishes.
Our Kashmiri Sun-Dried Bottle Gourd is prepared using traditional sun-drying methods and contains no added preservatives or artificial additives.
