Fresh aubergines are carefully prepared and left to dry naturally under the sun. This traditional drying process reduces moisture while helping retain the vegetable’s distinctive flavour, texture, and character.
In Kashmir, the practice of preserving vegetables through sun-drying is known as Hokh Syun. During the plentiful summer and autumn months, seasonal vegetables are dried and stored so they remain available when fresh produce becomes scarce during the harsh Kashmiri winter. Wangan Hachi continues to be one of the most recognisable ingredients associated with this traditional culinary practice.
When soaked, rehydrated, and cooked, the aubergine develops a unique texture and a deep, concentrated flavour that is noticeably different from fresh aubergine. It can be used in traditional Kashmiri recipes as well as curries and other vegetable preparations.

How to Prepare Wangan Hachi
Step 1
Take the required quantity of dried aubergine and rinse thoroughly with clean water.
Step 2
Soak the aubergine pieces in warm water until they begin to soften.
Step 3
Drain the excess water and gently squeeze the pieces.
Step 4
Cook with your preferred Kashmiri spices, gravy, or other vegetables until tender and full of flavour.
Serve hot with steamed rice or traditional Kashmiri bread.
Storage Instructions
